New Delhi, Delhi, January 28, 2010 /India PRwire/ -- With theme "Love for freedom", the restaurant had put together a pan Indian menu with dishes from 28 states.

India has seen a wide variety of cuisines from all over the world due to the various cultures contributing generously. Whether it was the Mughal era that introduced the Indians to the rich Mughlai food or the recipes popularized by the ancient civilization, the history of food in India is diverse and rich. Twenty eight states of India have different flavors to offer, creating an unending chain of delicacies. Baujee Ka Dhaba is serving these popular delicacies from 28 different states of India to celebrate spirit of The Republic Day.

Rajan Omprakash Mehra Managing Director, Baujee Ka Dhaba said that the idea of organizing this Bada Khana came from the thought of how soldiers on the borders have their meals. "For the jawans (soldiers) celebrating the spirit of Republic day is all about cooking and eating together. It was from these jawans that I got inspiration to do Baujee Ka Bada Khana and to find out what our jawans love to eat. I went to Wagah and Hussainiwala borders," he said.

Mrs. Anupama Mehra, Vice President adjoined that Baujee Ka Bada Khana serves to all those Indians having feeling of patriotism in their hearts.

The ambience of Baujee Ka Dhaba is like a small world of village from ancient era, folk art décor surrounded with mud walls, mitti ki lipai on the floor, paintings of rural people, khana in big old fashion patilas & big thaals. In this environment everybody enjoyed surely originality of the Indian theme & old Hindi Classics. The staff cooked and served food wearing 'Bawarchi attire' to give a real Indian touch. In short Baujee Ka Dhaba is not a restro but an "Aangan" designed by Mr. Rajan & Mrs. Anupama Mehra.

Baujee Ka Bada Khana menu was divided into two segments i.e. meal and beverages-Meals had variety consisting: Sarso ka Saag from Punjab with Rajasthan ki Gatte ki Sabzi to Maharashtra ka Baigan Masala, Kadai Paneer of Punjab with Uttaranchal ke Rajma, Bihar ka Aloo Chokha, with pickles of Lucknow, Rampur and the North-West Frontier, Bada Khana completed with Mutton Wind Aloo & Murgh Makhani and rest with other mouth watering delicious items. Beverages like Punjab ki Lassi, Haryana ki Chaach, Assam ki Chai, Purani Delhi ka Jaljeera and favorite of all Banta Masala. The food was free for children below five years. Shri Om Prakash Mehra, popularly known as "Baujee" in old age and in the year 1998, "Baujee Ka Dhaba" name was brain stormed by his loving grand daughter Ms. Tisha Mehra.
